We teamed up with local maltster Troubadour Maltings to make a beer using under-modified malts designed specifically for our unique pediococcus-only souring process. The Purple Dream is fermented with a blend of locally-collected yeast and bacteria. The dark ruby appearance sets the stage for a beer that is as elegant as it is complex. Notes of sweet Marion Blackberries and tart rhubarb, together with a full lactic acidity combine to form a flavorful sour beer with a dry finish.
