You’re Turning Violet
A delightful fruity sour with a color sure to make Violet Beauregarde blush. We used 80 pounds of blueberry puree and allowed the mixed culture to ferment most of the blueberry sugars. With such a fruit forward beer, we added Butterfly Pea Flower which turns liquid to a deep purple color in high acidity.
Bitterness: 6 IBU
Malts: Pilsner, Unmalted White Wheat
Glass Style: Tulip
Serving Temperature: 50-55 degrees
Food Pairings: Tangy, stinky cheeses like bleu and goat cheese with fresh fruit.
