Collaboration Sour Ale
A collaboration brew with Goats in mind. We teamed up with Goat Patch Brewing in Colorado Springs to brew two beers. Both beers started the same way: the same grain bill, Crystal hops from Billy Goat Hop Farms, and Jasmine & Rose Hips herbs, but we took different paths through fermentation. At Goat Patch in Colorado Springs, we fermented the beer with a French Saison yeast; at Gilded Goat, we soured the beer in our Solera.
Bitterness: 6 IBU
Malts: Pale Malt, Unmalted White Wheat
Glass Style: Tulip
Serving Temperature: 50-55 degrees
Food Pairings: Tangy, stinky cheeses like bleu and goat cheese with fresh fruit. Mussels and other seafood with a squirt of fresh lemon and/or drawn butter.
